To convert the natural fruit of the olive tree in a tasty appetizer, the ingredient of our favorite dish or perfect accompaniment, the olives must undergo one of two processes:

  • Cooking with an alkaline process.
  • Naturally fermented in brine, without any chemical treatment.

In Olives Edeta dominate the two forms of preparation.
